Firstly because it's misleading (the only server is the FAF one), second because it's not fitting the definition : When you host a game, you don't act as a server, because the protocol is peer-to-peer.There is no servers, just a "host" that decide how the game will be. Once started, the host can leave, the game will continue.

It will better to refer it as "hosted games" than "running servers".

After you have started the mod you want, you can choose a map you like. In the FAF client is also a Map Vault, which has a lot of custom maps you can download. You can also host a server with a custom map!

If you mean games that are hosted, there's almost always multiple games being hosted on a wide variety of maps, with many different mods and varying player skill levels. Last time I checked there was about 15 open at the same time.

Unless you frequent FAF at non-peak times (it tends to slow down a bit for around the next 12 hours at the time of this post, then pick up again rapidly during the evening in Europe time), you'll probably never be at a loss for games.
